Japanese Curry ala ~CHB~

1 lb. boneless skinless chicken thighs
1 tsp. salt
¼ tsp. ground black pepper
⅓ c. canola oil
2 large garlic cloves, minced
½ tsp. or inch fresh ginger
2 large onions, thinly sliced
2½ tsp. to 3 Tbsp. curry powder (depending on taste and tolerance)
3 c. chicken stock
2 carrots, cut into chunks
½ medium apple, peeled, cored, and grated
2 Tbsp. chunou sauce (2 parts ketchup to 1 part Worcestershire sauce in a pinch)
1½ tsp. unsweetened cocoa powder
1 Tbsp. tomato paste
1 tsp. salt
¾ tsp. turmeric
1 tsp. Szechuan peppercorns
½ tsp. cumin
1 bay leaf
2 medium potatoes, peeled and cut into chunks
¾ to 1 c. frozen peas

Roux
1 Tbsp. unsalted butter
1 Tbsp. flour 
  • Clean any large bits of fat or tendon from the chicken and cut into large chunks; sprinkle with salt and pepper and mix to distribute evenly.
  • Heat the oil in a heavy-bottomed pan over medium heat until hot and shimmering, then add the chicken in a single layer; let chicken brown undisturbed about 5 minutes; flip chicken and let it brown on the other side.
  • Turn down the heat to medium-low and transfer chicken to a bowl using tongs, making sure to leave as much oil in the pan as possible.
  • Add the garlic and ginger and fry in the oil until it’s not sizzling as much and it reaches a rich caramel brown color.
  • Add the onions, stirring to coat with oil; cover with a lid and let the onions steam until translucent and limp (about 10-15 minutes).
  • Remove the lid, turn up the heat to medium, and continue frying the onions, stirring constantly until pan contents are reduced to about 1/8 of original volume and it forms a shiny caramel brown paste (20-30 minutes); if the onion starts to stick to the pan before fully caramelized, try scrubbing off the stuck bits with a spatula, and if that doesn’t work, add a tiny bit of water to the area where things are sticking and use spatula to scrape.
  • When the onions are fully caramelized, add the curry powder and sauté briefly until very fragrant.
  • Return chicken to pot and add chicken stock, carrots, grated apple, chunou sauce, tomato paste, cocoa powder, salt, turmeric, peppercorns, cumin, and bay leaf; bring to a boil over high heat, then reduce heat, cover, and simmer for 15 minutes.
  • In the meantime, make the roux by adding the butter and flour to a small saucepan over medium heat; use spatula to stir constantly until bubbling subsides and roux is light brown in color.
  • When potatoes are tender, taste and adjust salt to taste; if you like your curry sweeter, you can add some honey to taste.
  • Finish the curry by stirring in the roux and green peas; bring to a boil to thicken.
  • Serve with hot rice or on top of a bowl of udon noodles.

Radish Green Dal ala ~DKBB~

Radish Greens Dal ~ala~ DKBB

When your garden gives you radishes, don’t toss out those radish greens!
4 cups chopped radish greens
1 cup split yellow lentils
1 large onion, chopped
1 large tomato, chopped
4 oz. diced Hatch green chilis
1 tsp. finely chopped ginger
½ tsp. turmeric powder
1 tsp. mustard seeds
1 tsp. cumin seeds
¼ to ½ tsp. cayenne
Curry of choice to taste
2 Tbsp. oil
Salt to taste
  • Wash the radish leaves thoroughly, then finely chop the washed leaves and set aside.
  • Rinse the split yellow lentils; cook per package directions.
  • Heat oil in skillet; add mustard seeds; when mustard seed sputter, add cumin seeds.
  • When cumin seeds start to crackle and slightly change color, add in the onions, ginger, turmeric, cayenne, curry, and green chilies; sauté until onions are tender; add in tomatoes and fry for 1 minute.
  • Add the chopped radish leaves and salt; cover with a lid and cook on medium low until radish leaves are wilted and incorporate (2 to 4 minutes).
  • Drain lentils and mash; add to skillet and cook on medium low heat for 5 to 10 minutes to fully incorporate flavors (add water if needed).
Serve with naan.

Curried Chicken, Veggie, and Pineapple ala ~DKBB~

1 lb. boneless, skinless chicken breasts
1 to 2 cups fresh pineapple, in chunks
Several small peppers, left whole but top/seeds removed (color, kind is all up to you)
Mushrooms (leave whole)
Onion, cut in big chunks
2 to 3 Tbsp. coconut oil
1 to 2 Tbsp. curry powder
¼ tsp. ground cayenne pepper
¼ tsp. salt

This dish is to be grilled; it can be done with skewers or put into a veggie grill basket. If using wood skewers, place them in a water bath to soak for 30 minutes.
  • Cut the chicken into bite-sized pieces and place in large bowl with the peppers, mushrooms, and pineapple (do not add the onion if you are using skewers); toss with coconut oil, curry, cayenne, and salt; let sit at least 30 minutes.
  • Prepare the grill; if using skewers, thread chicken, veggies, and pineapple into skewers in an alternating pattern and cook on grill under chicken is cooked through (about 10 to 15 minutes); if using a veggie grill basket, toss all into grill pan over prepared grill; stir or toss often to allow even cooking until chicken is cooked through.
  • Serve with rice.

Indian Mulligatawny Soup

¼ cup butter (or olive oil)
1 onion, chopped
1 carrot, peeled and diced
1 jalapeno, seeded and diced
3 garlic cloves, minced
2 tsp. minced ginger root
2 small firm apples, peeled, cored, and diced
1 can (14.5 oz) diced tomatoes (do not drain)
1 Tbsp. curry powder
1 tsp. ground cumin
½ tsp. paprika
½ tsp. ground cinnamon
½ tsp. ground turmeric
¼ tsp. cardamom
¼ tsp. freshly ground black pepper
½ tsp. dried thyme
½ c. red lentils (uncooked)
3 cups chicken or vegetable broth
2/3 c. canned unsweetened coconut milk
Salt and black pepper to taste
Roasted cashews for garnish (optional)
Chopped cilantro and/or scallions for garnish 
  • Melt the butter or a large pot or Dutch oven over medium-high heat; add the onion, carrot, and jalapeno; sauté for 4 to 5 minutes or until the onions have softened.
  • Add the garlic, ginger, apples, and diced tomatoes to the pot; sauté for another 3 minutes; mix all the spices together in a small bowl, then add them in and toss to coat.
  • Add the lentils and broth and let the contents come to a boil; turn the heat down to medium-low and simmer uncovered for 30 minutes.
  • Puree about 75% of the ingredients using an immersion blender (or if you don’t have one, put about ¾ of the soup and puree it in a blender); leave some of the chunks whole, as it adds a nice texture and consistency of the soup.
  • Return the soup to the pot if needed, then sit in the coconut milk and mix well; add salt and pepper to taste.
  • Serve topped with cashews, cilantro, and scallions as desired; also serve with naan bread for dipping.

1 lb. ground beef
1 medium onion, chopped
1 clove garlic, minced
1 Tbsp. curry powder
Salt & cracked pepper to taste
2 medium Roma tomatoes, seeded and diced
1 medium (or 3 small) zucchini, diced
Pita pockets
Refrigerated tzatziki sauce (recipe below)
  • In a large skillet, brown the ground beef with the onion and garlic; drain.
  • Add tomatoes and zucchini and heat for a few minutes before adding in the curry, salt, and pepper; continue heating until vegetables are heated through.
  • Serve in pita pockets and top with tzatziki sauce.

Refrigerated Tzatziki Sauce ala ~DKBB~

8 oz. plain Greek yogurt
2 Tbsp. lemon juice
1 Tbsp. olive oil
2 tsp. chopped fresh dill
1½ cloves garlic, minced
1 cucumber, peeled, seeded, and chopped
Salt and pepper to taste
  • Combine all in a blender and blend thoroughly; refrigerate for at least 1 hour before serving.

Root Vegetable and Chicken Curry ala ~DKBB~

2 skinless chicken breasts
2 Tbsp. coconut oil (or oil of choice)
1 yellow onion, chopped
1½ Tbsp. grated ginger (or 1 big squeeze of Squeezable Ginger)
1 to 2 turnips, diced to ½” cubes
1 to 2 rutabagas, diced to ½” cubes (peel as needed)
1 parsnip, peeled, diced to ½” cubes
1tsp. cumin seeds
1 to 3 Tbsp. curry (any kind…your choice)
1 can coconut milk
  • Cook the chicken breasts as you desire (broil, grill, fry in a small amount of oil), then remove from heat and allow to cool before cutting into 1” cubes. Set aside.
  • In a large skillet (or wok), sauté onion and cumin seeds in the oil over medium heat until the onion is softened and beginning to turn translucent (about 3 minutes).
  • Add the root vegetables and sauté 5 to 8 minutes before adding ¼ cup of the coconut milk; continue cooking 2 minutes, allowing the coconut milk to evaporate, then add in another ¼ cup and continue cooking about 5 minutes.
  • Add an additional ¼ cup coconut milk – by now the root vegetables should be softening a bit; once the vegetables are cooked through (but not completely mushy), add all the remaining coconut milk and the curry, stirring to incorporate.
  • Allow all to come to a gentle boil and cook a few more minutes before adding in the chicken; cook all on low for about 5 minutes to heat through.
  • Serve over rice (brown, white…your choice).

Curried Lentil & Veggie Stew ala ~DKBB~

2 tsp. olive oil
1 small yellow onion, diced
2 cups zucchini, peeled and chopped
2 garlic cloves, sliced thin (or minced – your preference)
1 cup chopped Roma tomato, seeded
2 Tbsp. curry powder
2 Tbsp. ketchup
2 cups vegetable stock
2 Tbsp. flour
½ tsp. kosher salt
2 cups lentils, cooked per package directions
2 Tbsp. fresh lime juice
  • Heat oil in large saucepan over medium-high heat; add onion and sauté 4 minutes; add zucchini and garlic and cook 3 minutes; add tomato, curry powder, and ketchup and cook 1 minute, stirring constantly.
  • Combine vegetable stock and flour, whisking well to blend in the flour; add stock mixture to pan; bring to a boil; stir in salt and lentils and cook for 3 minutes.
  • Remove pan from heat and stir in lime juice.
Add optional garnish, if desired, of plain whole-milk yogurt (not Greek-style) or sour cream and chopped, fresh cilantro to each serving.

Serve with toasted naan bread.

One-Pan Chicken Curry or Vindaloo ala ~DKBB~

One-Pan Chicken Rice Curry (or Vindaloo) ala ~DKBB~

2 Tbsp. butter, divided
1 medium onion, halved and very thinly sliced
2 stalks celery, diced (optional)
1 can sliced water chestnuts, drained (optional)
1 small can baby corn, cut into small pieces (optional)
2 Tbsp. flour (I prefer Wondra)
3 tsp. curry powder (or Vindaloo seasoning)
½ tsp. each salt and pepper
2 boneless skinless chicken breasts, cut into 1-in. pieces
1 can (14½ oz.) reduced-sodium chicken broth
1 cup uncooked instant white or brown rice

·       In a non-stick skillet, heat 1 Tbsp. butter over medium-high heat; sauté onion until tender; remove onion from skillet and set aside.
·       Mix flour and seasonings; toss with chicken pieces; in same skillet, heat remaining butter over medium-high heat; add chicken and cook until no longer pink, turning occasionally (4 to 6 minutes).
·       Stir in broth and onion; bring to a boil; stir in rice.
·       Remove from heat and let stand, covered, for 5 to 7 minutes (until rice has absorbed liquid and mixture is saucy).

Curried Corn Chowder with Chicken ala ~DKBB~

Curried Corn Chowder with Chicken ala ~DKBB~

2 Tbsp. butter
1 medium onion, chopped
3 celery ribs, chopped
2 to 3 Tbsp. chopped garlic snapes (optional)
2½ tsp. curry powder
½ tsp. each salt and pepper
¼ tsp. cayenne pepper
1 to 2 tsp. dried parsley
½ to 1 tsp. each turmeric, basil, cumin (as desired)
4 to 5 cups frozen corn
2 medium potatoes, peeled and diced
4 cups chicken broth
½ cup milk
½ cup flour
2 to 3 cups cooked, diced chicken breast (or 2 cans of chicken in water, drained)
  • In a Dutch oven, heat the butter over medium heat; add onions and celery (and garlic snapes, if using them); cook and stir until veggies are tender.
  • Stir in seasonings; cook 30 more seconds.
  • Add in broth, corn, and potatoes and bring to a boil; reduce heat and simmer, covered, for 15 to 20 minutes (until potatoes are done).
  • In a small bowl, whisk milk and flour together until smooth; stir into soup, bring soup back to a boil; cook for 2 minutes or until thickened.
  • Stir in chicken; heat through.
Serve in bread bowls, or over rice, or with sliced artisan bread (which you can use as an eating utensil).

Curry Chicken Stew ala ~DKBB~

2 cans (14.5 oz. each) chicken broth
1 can (10.75 oz.) condensed cream of chicken soup, undiluted
1 tub Knorr concentrated chicken stock -or- 1 heaping Tbsp. Better Than Bouillon Chicken Base
4 garlic cloves, minced
1 Tbsp. curry powder
¼ tsp. salt
½ to 1 tsp. cayenne pepper
¼ to ½ tsp. white pepper
5 Tbsp. dried minced onion
4 boneless skinless chicken breasts
1 medium yellow pepper, diced
4 green onions, chopped (for garnish, if desired)
Hot cooked rice 
  • In a large bowl, combine the first nine ingredients and mix well.
  • Place chicken breasts and yellow pepper in a 5- or 6-qt. slow cooker; pour broth mixture over all.
  • Cook, covered, on low for 4 to 5 hours.
  • Remove chicken breasts and cool slightly; shred meat and return to slow cooker; heat through.
  • Serve with hot rice, placing 1 cup of rice into each soup bowl, then filling the bowl with the stew.
  • Garnish with chopped green onions, if desired.
